Well Crap! - WIW

Well crap!  Remember last week when I wrote this saying I was going to start posting my weekly weigh-ins hoping it would motivate me to get back on track??  Well it didn't.  And I am now sitting at a 2.9 weight gain for the week. 

I'm not proud by any means.  I didn't try and it shows.  I hesitated even posting this today, but it is what it is!  Our blog is supposed to be about our lives... good and bad.  We've got some BIG things going on in our lives right now that I can't wait to blog about, but it's just not a good time.  It's stressing us out to the max.  Stress = binge eating, so that's just where I'm at.  Hopefully we'll get some good news in a few weeks and will be able to spill the beans.


Until then, I leave ya with my numbers.

Wedding Day Linkup

Graham and I were married on October 27, 2012.  We've been married a whoppin' 8 months and I still catch myself day dreaming about how perfect our big day turned out.  So lucky for me these ladies are hosting a linkup where I have a reason to brag all about it!

Location-- My sister's beautiful backyard on a gorgeous fall day.  We said our vows in their gazebo over looking the pond with our closest family and friends.  It was a very small wedding, like 50-60 people; which was EXACTLY what we wanted!  


Decor-- Our guests were seated on haybales and the area was surrounded with lots of rustic, fall decor.  Pinterest was a lifesaver.  I was inspired to make most of the items myself, including our bouquets!  We used cotton bolls from his parents farm, painted pumpkins, and used a guest bench (instead of a book).   


Wedding Party-- My maid of honor was my sister (Kelly).  My new SIL (Staci), good friend (Erin), and sweet niece (Ayanna) were all bridesmaids.  Graham's brother (Reggie) was his best man.  His new BIL (Paul), long time friend (Jamie), and our mutual friend (Sergio) were all groomsmen.  We all wore cotton dresses / shirts and finished the look off with boots. 

Colors--  Our main color was turquoise with pops of fall colors throughout. 



 Reception-- We had a dinner and a dance at the local winery.  BBQ, beer, wine, and music kept our guests entertained for the evening.


First Dance-- We danced to Wade Bowen's "Perfect Silence".  Every time I hear that song I think of that day, and us, and it just brings tears to my eyes.  Every. Single. Time.  I'm such a sap!

What I Would've Changed-- That day honestly just rolled on by without a hitch.  I guess if there was ONE thing that got under my skin that day, it would've been the fact that our cake wasn't right.  Oh not the Copenhagen one; that one was perfect.  The white one should've looked like cowhide.  AND the fact that she cut off the flowers in my arrangements on the table to put on the edges of my cake.  Seriously. 

That will never take away from the fact that the day was amazing.  I married my sweet man and I was lucky to do so with those who love us most right beside us.

Gettin' Back At It - WIW

I've been a little MIA lately in the bloggin' world.  Heck who am I kidding; I've been a little MIA lately in life.  I've had the I don't want to's... BAD!   

I've definitely been struggling staying in weight-loss mode.  Truth be told, before this week I hadn't even taken a walk since 5/1.  I know that because my trusty MapMyWalk app told me so.  Odd thing, it's only trusty when I actually use it.  Hmmm, who would of thought?  =)  As you're probably already guessing, I also haven't been logging my food, which has thrown me into a whirlwind of eating everything in sight.  It's not pretty people. 

I had gotten down to 215 in the middle of April and it was like I just gave up.  I kept looking at how far I still had to go and wasn't even proud of how far I'd come.  Losing 34lbs didn't come easy!  I think I just got overwhelmed with it all.  Sitting at 223 (and some change) today I know that I've just gotta get back at it. I'm still determied to lose the weight and be healthy.  We don't wanna wait forever to start trying for our own lil baby Guy!  =)

On a positive note, I walked a mile both Tues. and Wed. this week.  I bout' died I might add... temps were in the mid 80's when I left off in April and now they're hovering around 100.  This summer heat is gonna kill me!  I'm going to continue walking about a mile a day this week and bump it up to 2 miles a day next week.  I had to basically start over with my workouts.  I've lost nearly all of my stamina. 

I also started logging all of my food again.  I was getting really bored with the menu I was eatin', so I'm making it a point to watch portion sizes more than anything this time around.  If I deprive myself from something it only makes me want it that much more.  It's hard to put an end to that cycle, but I'm gonna try!

The bloggin' world has been doing the whole "Weigh In Wednesday" thing forever, but I was always to chicken to post my numbers for the whole wide world to see.  Maybe, just maybe, it'll be the kick I need to keep on truckin' along.

In other news, I am working on refacing some sweet wood furniture I found at a garage sale a week or so ago.  I'm working on some tutorials and am excited to see what they'll look like when I'm all finished up.  I'm no expert by any means, but I'm having fun trying some different distressing techniques.  Thank you sweet baby Jesus for Pinterest!

Canellini Bean & Cilantro Burrito

Often times I turn to pinterest for meal ideas when I'm tired of the same ol', same ol' that I normally dish out to us.  I pinned this recipe for Black Bean & Cilantro Burritos last week and was undecided whether or not to try it.  It's a meatless meal and I honestly didn't figure Graham would be too fond of the idea. 

While thinking about what I wanted to make for dinner yesterday, I decided since I had all of the ingredients that I'd just try it.  If it sucked, I'd never make it again.  Wouldn't ya know that I got home and didn't have any black beans?  I did have 3 cans of cannellini beans though, and I didn't want to go to the store, so that's what I used!  By that time I had decided I no longer wanted to cook the brown rice for it either.  I figured since I was already changing the recipe up, I could just do what I wanted to with it.  That and I was too lazy to boil water for the instant rice.  =)

I did however want a little something else in it to give it some substance (so Graham wouldn't think I was starving him), so I added half a can of whole kernel corn.  I also added some garlic powder, green chile powder, salt, and pepper to give it a little more flavor.  Below is the list of ingredients, but to be honest the measurements could be a little off.  I never measured anything.  I spooned everything into the bowl until it looked good.  I really don't think this recipe is possible to mess up, just add the stuff until it looks good!

1 can Canellini beans (white kidney)
1/2 can whole kernel corn
Handful of cilantro, chopped
1/2 cup salsa
1/2 cup shredded cheddar cheese
Garlic powder
Green chile powder
Chili powder
Salt & pepper
Sour cream
Flour Tortillas 

Mix all ingredients except sour cream in a big bowl.  I used fresh salsa, because it just tastes so much better.  If you're into the bottled stuff, I'm sure that would work too. 

 

Warm up the tortillas in the microwave just enough to be able to fold them.  Once warm, I added a spoonful of sour cream and then piled the mixture on top.  Roll up the ends on both sides and then roll from the other sides to hold all of the goodness in the burrito.  Set the burritos on a warm flat iron or skillet, turning until all sides are browned.

 

That's it!  So easy and they were honestly so good.  I was surprised how much I liked them and how filling they were.  They'll definitely be a quick go-to when I don't really feel like cooking, but I still feel like eating!

School's Out!

School's out for the summer and our nieces and nephew are definitely excited about it. 
To celebrate, I made them some little goodie bags to get the summer-party started!

Jackson, Mollie, and Gracen all received these cute little Smore's bags. 
 

Reg sent us this pic of their lil munchkins enjoying theirs.

Since Ayanna lives in TX and I don't get to spend near as much time with her as I'd like to, I sent her a box-o-sunshine!  Everything in her box was yellow and will be great for some summer-time fun.


Kelly sent us these pics.  Ayanna was happy with her loot! =)

We plan on spending some quality time with all of these lil cuties.
It's gonna be a good summer!
