Often times I turn to pinterest for meal ideas when I'm tired of the same ol', same ol' that I normally dish out to us. I pinned this recipe for Black Bean & Cilantro Burritos last week and was undecided whether or not to try it. It's a meatless meal and I honestly didn't figure Graham would be too fond of the idea.
While thinking about what I wanted to make for dinner yesterday, I decided since I had all of the ingredients that I'd just try it. If it sucked, I'd never make it again. Wouldn't ya know that I got home and didn't have any black beans? I did have 3 cans of cannellini beans though, and I didn't want to go to the store, so that's what I used! By that time I had decided I no longer wanted to cook the brown rice for it either. I figured since I was already changing the recipe up, I could just do what I wanted to with it. That and I was too lazy to boil water for the instant rice. =)
I did however want a little something else in it to give it some substance (so Graham wouldn't think I was starving him), so I added half a can of whole kernel corn. I also added some garlic powder, green chile powder, salt, and pepper to give it a little more flavor. Below is the list of ingredients, but to be honest the measurements could be a little off. I never measured anything. I spooned everything into the bowl until it looked good. I really don't think this recipe is possible to mess up, just add the stuff until it looks good!
1 can Canellini beans (white kidney)
1/2 can whole kernel corn
Handful of cilantro, chopped
1/2 cup salsa
1/2 cup shredded cheddar cheese
Garlic powder
Green chile powder
Chili powder
Salt & pepper
Sour cream
Flour Tortillas
Mix all ingredients except sour cream in a big bowl. I used fresh salsa, because it just tastes so much better. If you're into the bottled stuff, I'm sure that would work too.
Warm up the tortillas in the microwave just enough to be able to fold them. Once warm, I added a spoonful of sour cream and then piled the mixture on top. Roll up the ends on both sides and then roll from the other sides to hold all of the goodness in the burrito. Set the burritos on a warm flat iron or skillet, turning until all sides are browned.
That's it! So easy and they were honestly so good. I was surprised how much I liked them and how filling they were. They'll definitely be a quick go-to when I don't really feel like cooking, but I still feel like eating!
